Here’s a good recipe that could pass for paleo. This is a super healthy, super tasty burger recipe from the hugely successful recipe book series Paleo Restart.
tablespoon Fresh Ginger, grated
1 garlic clove, grated
Pinch of chilli flakes, (optional)
Light Soy sauce
2 spring onions, chopped
Fist off, Preheat oven to 180c / gas mark 4. Rub the salmon filet with half the ginger and half the garlic. Then marinate for a couple of hours or if time is short, a few minutes will do. Place the salmon into the center of a square piece of foil and wrap loosely into a parcel. Then cook in oven for around 20 minutes or until the fish is flaky.

When the fish is almost ready, heat a frying pan on a medium to high temp. Crack the eggs into a bowl and whisk. Then add the remaining ginger and garlic along with a splash of soy sauce and the spring onions, mix well.
Pour the egg mixture into the hot frying pan, making sure the egg reaches the edges and cook for around 1 minute. Unwrap the foil parcel and lift the salmon gently, placing it in the middle of the omelet.
Now for the tricky bit. When your confident that the omelet will stay in one piece, tilt the pan and fold one side of the omelet over the salmon to make a half circle. Then place the folded omelet back in the oven for 1 minute or until the egg in the middle is cooked.
This omelet goes great with a leafy salad and a side of sweet corn.
